Herb Butter Roasted Whole Chicken


4- 4.5 lbs. Chicken

4 Tablespoons Butter

3 Tablespoons EPIS

Salt to taste



Mix Butter and EPIS. Rub all over the chicken, under the skin and inside.

Marinate for at least an hour or as long as a day.

Preheat Oven at 400 degrees. Put Chicken in  a roasting pan.

Baste with melted Butter/ EPIS Mixture in the pan after 25 minutes. Cook for another 25 minutes  or until your chicken is cooked  through and golden!

Let rest for 10 minutes, cut and serve!


*Turn this Roast into a one pan meal. Add carrots, wedges of potatoes or any favorite vegetables with the chicken in your roasting pan and Voila! Dinner is served!!!
