Vegan Lasagna

Ingredients

6 sheets No Boil Lasagna (365 Whole Foods Brand)

2 cups Sliced Mushrooms

2 ½- 3 cups Zucchinis

2 cups Tomato Sauce ( store bought or Homemade)

1 Medium onion

2 cups Vegan Cheese “ Optional”  (Daiya Cheddar Vegan Cheese)

3 Tablespoon Olive Oil

2 Tablespoon EPIS

Salt to taste

 

Directions

Preheat your oven to 395 degrees.

In a medium pan, heat 2 tablespoon of  Olive Oil on medium, add onion and cook for 2 minutes.

Add mushrooms and EPIS and salt if you like, cook for 2 minutes.

Add Zucchinis and coat evenly for about two minutes, then stir in your tomato sauce.

Cook for a minute and turn off the heat.

Coat the bottom of an 8x8 or 9x9 baking dish with 1/2 tablespoon of Olive Oil, then put 2 sheets of lasagna and layer with your vegetable mixture, then cheese.

Then another layer of 2 sheets lasagna, veggies, cheese.

The last layer is the 3 lasagna sheets, drizzle with some Olive Oil, cheese and some tomato sauce.

Cover with parchment paper and put in the oven.

Cook for 25 minutes and uncover.

Cook for an additional 5 minutes.

Let rest and enjoy!

 

*You can easily use regular cheese instead of vegan cheese and/or add Ground Chicken, ground Turkey, Ground beef, etc.…*

Serve with a salad and dinner ready in no time!
