One Pan Shrimp and Vegetables


1-pound uncooked shrimp ( peeled and deveined)

1 ½ cup zucchinis halved and sliced

1 cup mushrooms

1/2 cup julienned bell pepper ( red or orange)

1 tablespoon Olive Oil

1 Tablespoon EPIS

Salt to taste



Preheat Oven to 395 degrees.

In a bowl toss all the ingredients. Place evenly on a baking sheet.

Bake for 12-15 minutes.


Enjoy with Tortilla, your favorite grain or on its own!
