Rice and Peas
Ingredients
1 ½ cup frozen or fresh peas
1 cup rice
2 cups Water
1 tablespoon EPIS
1 Tablespoon Olive Oil
Salt to taste
Directions
Rinse rice and drain.
Heat olive oil in a pan on medium heat, add peas and EPIS, cook for 5 minutes , then stir in rice. Add water and bring to boil. Lower the heat a bit.
Cook uncovered until water is absorbed, then put the heat on low, cover and cook for 8-10mns.
Fluff rice with a fork.
Serve as a side dish or enjoy as you would like!
