Simple Beans Stew


3 cups of  dried Beans of your choice

2 tablespoons Olive Oil

1 tablespoon of EPIS

Salt to taste



Rinse and sort beans.

Add beans to a pot and cover with water. Soak overnight.

Drain and add water to the pot with the beans.

Bring to a boil over high heat. Reduce heat , and simmer until beans are tender, about 1 hour.

Once beans are tender, add EPIS, olive oil and let simmer an extra 10 minutes

Serve with hot cooked rice, fried plantains, vegetables, on a salad or on its own.
