Split Pea Soup with Smoked Turkey


2 ½ cups dried split peas

1 tablespoon Olive Oil

1 medium diced onion

1 cup diced carrots

1 ½ lbs. diced Smoked Turkey meat (Recommend:  KOCH’S, Fully Cooked Turkey, Certified Humane)

8-10 cups veggie broth

3 Tablespoons EPIS

Salt to taste



Sort and rinse the split peas well.

In a stockpot on medium heat, add Olive Oil, then onions, peas, carrots, EPIS and cook for 5 minutes.

Add turkey. Stir in veggie broth.

Bring to a boil, then lower heat. Add salt if desired.

Simmer for 40-45 minutes or until peas are tender. Stir occasionally.



*Substitute Ham for Turkey if you prefer*
