Vegan Split Pea Soup


2  cups dried split peas

1 tablespoon Olive Oil

1 medium diced onion

2 cup diced carrots

3 stalks celery (chopped)

2 cup diced potatoes

8-10 cups veggie broth

3 Tablespoons Epis



Soak split peas overnight and rinse.

In a stockpot on medium heat, sauté Olive Oil, onions, potatoes, celery,  peas, carrots and EPIS for 8- 10 minutes. Stir in veggie broth. Bring to a boil, then lower heat. Simmer for 45-50 minutes or until peas are tender. Stir occasionally.
